TUCKED away in the heart of Chelsea is the quirky speakeasy-style cocktail bar Barts. Upon stepping through the somewhat hidden entrance, after providing a top-secret somewhat cheeky password, you find yourself tele-ported back to the roaring twenties and the time of prohibition.

On the menu? A mood-boosting and colour changing cocktail. Perfect way to kick off the start of yet another work week and beat the Monday blues.
Barts bartender Alberto Rodriguez Sanchez created an absolute instagram treat, making us more than snap-happy. Starting out as a blue liquid, the cocktail soon transitions into a lovely shade of purple eventually transforming pink after adding the final ingredients. The liquids came cascading down a big sphere of ice and created a mesmerising scene to behold, instantly undoing us of our worries.
The secret ingredient, pivotal for the colour changing magic is the exotic pea butterfly tea, as it interacts with the acid, causing the stunning transformation, mixology at its finest.

This limited edition cocktail was a week long special and is no longer available. But not to worry, Glass got their hands on the top-secret recipe. This mood boosting cocktail consists of 20 ml of cacao blanc liqueur and 30 ml Don Julio tequila. Adding that punch that lifts your endorphins is 5 ml of chili tequila and 2 dashes of ginseng bitters. As for the final touch? 20 ml of the Pea Butterfly Tea. Pour 25 ml of lemon juice of this mixture and see it work its colour changing magic.

With live music in the background, this was a mood boosting trifecta. Definitely taking the Blue out of Blue Monday.
