The perfect Ionian getaway at Domes Miramare, a Luxury Collection Resort, Corfu

THE sunny island of Corfu is located off the west coast of the Greek mainland and its capital, Corfu Town, is a UNESCO world heritage site displaying Italian architectural influences from its days as part of the Venetian Republic.

The town’s vibrant squares and mazes of cobbled alleyways are lined with pastel-hued buildings with shuttered windows and arched doorways, while the trailing ubiqitous bourganvillea adds a splash of colour to the streets.

A 30-minute drive south along Corfu’s east coast is Domes Miramare, a Luxury Collection Resort. This destination was once the summer home of the Onassis family and a playground to international royalty and celebrities.

The adults-only retreat still retains its prestigious status having recently been overhauled with a multimillion euro development, which preserves its centuries old collection of olive trees that contribute to the organic character of the residence.

The expansive reception and lobby lounge is the central hub and the use of natural materials is omnipresent, with heavy wooden chains hanging from the rafters.

A prominent olive tree takes centre stage and pale coloured furnishings are accessorised in shades mimicking the outdoor hues of green and blue, while a grand piano sits among the sofas and is played by various artists every morning and evening.

This airy space with glass ceilings provides lashings of light to flood in, and the floor-to-ceiling sliding doors lead onto the terrace and the Ionian sea shore, with the Greek mainland as the backdrop.

At the helm of the culinary offering is Michelin-starred chef Tassos Mantis, who presides over dinner at the Makris restaurant, which is the highlight of any stay.

The contemporary Greek menu, which is altered daily, features a stand-out Rib Eye Black Angus steak, plenty of fresh fish and seafood, as well as a list of delicious vegetarian and vegan options.

The other dining choices include the sushi restaurant, Raw (best to make a reservation before your arrival) and the swanky poolside bar serving light meals and snacks throughout the day.

The time here passes quickly. Spend it either exercising, enjoying the private beach, or opting for the traditional poolside bathing experience lounging on the cabannas or sun chairs. The Emerald Rooms and Suites are located in three separate low-rise buildings, with balconies offering vistas over the gardens or out to the sea.

This is the perfect vantage point to watch the pink sunset being swallowed by the horizon every evening , while downing a tangerine-coloured Kumquat cocktail.

At the other side of the resort are the Pavillion Suites, with individual plunge pools and outdoor jaccuzis. A stay at one of these dwellings allows access to the Haute Living Room, a tranquil fully-serviced space serving all-day and night-time complementary premium alcoholic drinks and tasty snacks.
