WHEN I think of Florida, USA, it’s easy to picture endless stretches of sand, colourful sunsets and a seemingly endless summer. Yet spending time in Palm Beach County quickly reveals a different side of the Sunshine State – one shaped as much by creativity, cuisine and culture as it is by its coastline. Here, days move at a slower pace, with mornings by the ocean, afternoons spent exploring independent boutiques and evenings centred around memorable dining experiences.

My journey begins in Delray Beach, where I check into The Ray Hotel Delray Beach, a contemporary boutique property tucked away in the heart of the Pineapple Grove Arts District. From the moment I arrive, the hotel feels connected to its surroundings, with striking artwork throughout the lobby and guest rooms, modern interiors inspired by nautical elements and a relaxed atmosphere that mirrors the neighbourhood outside. Just moments from Atlantic Avenue and a short journey from the beach, it makes the perfect base for discovering one of South Florida’s most walkable coastal towns.

Of course, no visit to Delray Beach would be complete without time spent by the water. Whether watching the sunrise over the Atlantic or settling into a lounger for a slower afternoon, the beach quickly becomes part of the rhythm of the stay. The route from the hotel to the shoreline takes me through colourful streets filled with local character, making the journey just as enjoyable as the destination itself. With soft sand beneath my feet and the ocean stretching out ahead, it’s easy to see why Delray Beach has such a devoted following.

Beyond the coastline, Delray’s personality comes through in its independent boutiques, galleries and colourful murals. There is a creative energy running through the city, yet it never feels overwhelming or rushed. Lunch at El Camino introduces me to Delray’s lively food scene, where vibrant Mexican soul food, handcrafted margaritas and an impressively generous plate of nachos create the perfect laid-back dining experience.

As evening arrives, Delray Beach takes on a different character. Dinner at Akira Back, the chef’s first Florida namesake restaurant created in partnership with The Ray Hotel, becomes one of the highlights of my stay. Combining Japanese techniques with influences gathered from Chef Akira Back’s global travels and Korean heritage, the menu feels both refined and playful. Each dish arrives with careful attention to presentation and flavour, with the AB Tune Pizza and Miso Black Cod standing out as particular favourites. It is the kind of dining experience that encourages you to slow down and savour every course.
The next chapter of my journey takes me north towards Palm Beach, where the atmosphere shifts from creative coastal charm to timeless elegance. A walking tour of the iconic Worth Avenue introduces me to a world of Mediterranean architecture, elegant courtyards and luxury boutiques that have shaped the identity of Palm Beach for generations.

Lunch at Café Boulud, located within the historic Brazilian Court Hotel, feels like stepping into a quieter side of Palm Beach glamour. Set within the property’s beautiful courtyard, surrounded by palm trees and fountains, the setting is as memorable as the cuisine.
The area’s shopping scene also offers plenty to discover, from established luxury names to independent concepts such as Coniglio Palm Beach, an innovative design studio where fashion, art and functionality come together through beautifully crafted adjustable pieces.

The pace shifts once I arrive at PGA National Resort, where the energy of the coast gives way to a more tranquil setting surrounded by lush landscapes and open space. Best known for its championship golf courses, with wellness, dining and outdoor experiences all playing an equally important role. It feels worlds away from the bustle of Delray Beach, offering a slower tempo while still capturing Palm Beach County’s love of sport and leisure.
One of the most restorative moments comes at the resort’s spa, where a relaxing massage provides the perfect opportunity to fully unwind. Afterwards, I take time to enjoy the outdoor pool and hot tub, allowing the afternoon to unfold without a schedule.
Food remains a highlight throughout my stay at PGA National Resort, with each restaurant offering something different. Mornings begin with leisurely breakfasts, while casual lunches at Birdie’s Diner provide a relaxed break between activities. In the evening, The Butcher’s Club, recently recognised in the 2025 Michelin Guide, delivers a refined steakhouse experience, while Sushi by Boū offers an elevated take on Japanese dining in an intimate setting.
Beyond the restaurants, one of the most unexpected experiences comes in the form of the resort’s beekeeping experience. Meeting the resident beekeeper offers a fascinating glimpse into the importance of sustainability and the role the hives play within the resort’s ecosystem. Afterwards, lunch at Honeybelle, featuring the very honey produced on-site, brings the experience full circle with chef-crafted dishes.

Exploring beyond PGA National reveals even more of Palm Beach County’s diverse culinary identity. Dinner at Stage Kitchen & Bar showcases bold flavours inspired by global influences, while Seahawk Prime combines a sophisticated atmosphere with modern steakhouse dining. For a slower start to the day, Hive Bakery & Café in West Palm Beach is the perfect stop, with house-made pastries, artisanal breads and beautifully prepared savoury dishes making it a favourite among locals.

Shopping also forms an important part of the Palm Beach experience. From the luxury boutiques of The Gardens Mall to the much-loved Church Mouse, where antiques, homeware and fashion finds fill every corner, the area balances high-end shopping with a sense of discovery.
Sport remains woven into the fabric of Palm Beach County, and a visit to the USPA National Polo Center offers a glimpse into one of the region’s most treasured traditions. After trying my hand at polo on a wooden practice pony, touring the impressive facilities and enjoying brunch overlooking the immaculate fields, I gain a new appreciation for the heritage and elegance surrounding the sport.
Palm Beach County may be famous for its beaches, but what stays with me most is its diversity. It’s a destination where mornings can begin by the ocean, afternoons are spent discovering art and wellness, and evenings unfold over exceptional food. Whether exploring Delray Beach’s creative spirit or embracing the elegance of Palm Beach, I leave with a newfound appreciation and perspective for this side of Florida.
