CAROUSE has announced its upcoming schedule of chef residencies and creative experiences. Lunch at Carousel is organised by Ollie Templeton, head chef and co-founder and the menu is adapted weekly to offer creative seasonal small plates that are paired with a selection of wines. Examples include Lamb Sweetbreads, Rosehips and Celeriac and Tagliatelle with Girolles, Egg York and Sage.
For dinner, the chefs collaborate with international guest chef residencies to prepare a four or five-course dinner menu showcasing their signature style and approach to cooking. Highlights from the upcoming chef residency line-up are Tā Tā eatery, Massimilian Musso of Ca’ Vittoria and Tobyn Excell.
Carousel was opened in 2014 by four entrepreneurial cousins, Ollie, Ed, Will and Anna Templeton. They loved talking about food, drink and travel and so decided to find a way to work alongside other people who were passionate about these topics. They have expanded their creative spaces to two buildings in order to make room for the demand by brands to use the space and by customers to participate in the variety of experiences offered.
Ana Gonçalves and Zijin Meng – Tā Tā eatery
Inspired by their mutual love of rice, Ana Gonçalves and Zijin Meng founded the Tā Tā eatery, a Chinese-Portuguese fusion street food stall in Druid Street Market in 2015. Their food was a huge hit, leading them to open at another venue in Haggerston. Their menu at Carousel will be high-quality Chinese-style tapas made with Portuguese ingredients.
Tobyn Excell is a trained forager and chef with unrivalled expertise in sourcing produce and then using his finds to make unique, innovative dishes. Examples of his dishes are Roast Lamb, Beach Herbs and Buttermilk and Dulse Ice Cream, Charcoal and Cherry Blossom.
Massimiliano Musso is a Michelin star chef with a restaurant, Ca’ Vittoria, in the hills above Piemonte, Italy. His menu at Carousel will be a combination between innovative, creative dishes and classic Italian favourites.

As well as their chef residencies, Carousel offers a diverse programme of experiences. They range form arts and crafts, food and drink and mindfulness. Some are on off events, other are continued series. Highlights include a calligraphy workshop, a tiny john workshop, a dumpling making masterclass and wine tasting.
Alice Gabb, a wedding stationer, modern calligrapher and illustrator, teaches guests modern calligraphy. The aim is for guests to be able to write their favourite quote in Alice’s signature handwritten script.
The tiny john workshop is with London Terrariums and involves creating a self-contained ecosystem and learning how to look after them.

Chinese laundry, a innovative, authentic Chinese restaurant in Islington, teaches guests how to prepare, cook and serve a variety of traditional Chinese dumplings.

Wine tasting is with Carousel’s Bar Manager, Matt Varona. This year the wines are Sicilian because Varona has recently returned from a wine tour of Sicily and is keen to share what he learnt.
