Glass indulges in haute cuisine at Anantara Rome’s INEO restaurant

ANANTARA Palazzo Naiadi Rome Hotel is one of the most well known and visually stunning hotels in Rome. As we enter the hotel on a warm Saturday evening, cool and sultry sounds greet us from the bar. Stunning art pieces adorn the walls, interspersed with Roman columns and grand arches. A flair bartender smiles and impresses with his skills. But pass further along the grand corridor and you come to INEO – the renowned home of experimental fine dining in Rome.

The brainchild of Chef Heros de Agostinis, INEO aims to blend Italian culinary principles with Agostinis’ love of travel and the many techniques and flavours he has learnt from journeys and kitchens around the world. Born in Rome but with mixed Italian and Eritrean heritage, fusing different cultures is in Agostinis’ blood.

Guests can expect such avant-garde pairings as hand-made maccheroni pasta cooked in madeira sauce with Eritrean beef stew and 24 month -aged parmesan, or berlingot ravioli filled with muhammara (Middle-Eastern walnut and roasted pepper dip) and seafood.

Even the bread trolley at INEO is an eye-catching adventure – with a veritable buffet of Agostinis’ favourite specialty breads – housemade of course. It was even awarded ‘Best bread on the table’ by the Italian food and wine bible, Gambero Rosso. 

The dining experience is completed with wine selected by the equally adventurous Wine Manager and sommelier Federico Spagnolo. The impressive wine cellar he has created is a result of meetings, friendships and explorations of vineyards and farms around the world.

Here you will find not just the big names but also wines from small growers and lesser known regions. Spagnolo says that he looks for cellars with “an interesting product and a story to tell”, with a growing portion of his menu including biodynamic and organic wines.
