The Coral Reef Club collaborates with Ollie Dabbous for a tasty venture

THE ACCLAIMED family-owned hotel in Barbados, The Coral Reef Club is commencing a new tasty venture with renowned UK-based chef Ollie Dabbous.

Dabbous is the co-founder and Executive Chef of Hide Restaurant in London’s Piccadilly which launched in 2018, earning itself a Michelin star just six months after opening. The chef formed a friendship with the owners of the Coral Reef Club – the O’Hara’s – which he met through a mutual friend who brought them to dine at Hide.

As of October 19th, the chef will take on his first international guest residency at the celebrated Caribbean hotel continuing until the 23rd of the month. The collaboration will consist of Dabbous spearheading a seasonal menu designed by himself and influenced by the local produce of tropical Barbados.

Diners can anticipate the refined subtly of the chef’s deliverables mixed with the casualty of Caribbean cooking while feasting with views of the tranquil Caribbean Sea.

The menu is bright and innovative with highlights comprised of spiced grilled lobster, paired with cauliflower couscous and a broth made out of the shell, as well as, roasted scallops with fenugreek butter, coriander and pistachio. As for Dabbous’ sweet treat, he is presenting his version of a Barbadian dessert consisting of a coconut sundae paired with hot smoked caramel and rum.
